Champagne Vinaigrette

2 garlic cloves, minced
1/4 C dijon
1 lemon, juiced
1 C champagne vinegar
2 C canola oil
1 Tbsp sugar
salt to taste (see Chef)

Place all items, except the oil and salt, in to a large stainless steel bowl, and whisk for 1 minute.

Slowly add oil while whisking until fully added.

With Chef, add salt to taste.

Pack in to 1 lt plastic with lid and label.
