Cucumber Salsa

2 cucumbers, divided
1 1/2 cups cups Greek yogurt
juice of 1/2 a lemon
3 garlic cloves, minced
12 cherry tomatoes, quartered
1 small red onion, halved and thinly sliced
1/2 cup chopped flat-leaf parsley
1/4 cup chopped mint
1/4 cup extra-virgin olive oil

Peel and grate both cucumbers, then squeeze them with your hands to remove excess water. Stir
together with yogurt, lemon juice, garlic, and 1/4 tsp each of salt and pepper. Stir together with
tomatoes, onion, parsley, mint.
