Garlic Aoili

1 clove garlic, minced
1 tsp salt
3 egg yolks
2 tablespoon lemon juice
2 tablespoon champagne vinegar
1/2 cup olive oil
1 cup vegetable oil

Cut the ends off of the garlic, peel it, and chop roughly.
Put garlic, yolks, salt, juice and vinegar in to the bowl of the Robot Coupe mixer. Get help from Chef if required.
Start mixer while slowly SLOWLY dropping oil in to the hole in the lid. The stream that you add this oil to the bowl is very important as the sauce can break if you add the oil too quickly.
