Latkes (aka) potato pancakes
2 pounds of Russet potato
1 medium onion
2 eggs, lightly beaten
1 tsp salt
½ tsp ground pepper
- peel potatoes and put in cold water
- using a grater, grate the potato and onion into a bowl
- strain the mixture (see chef)
- pour off the water, keep the starch add to the grated contents
- add the eggs, salt and pepper
- heat a cast iron pan to 325 and coat with a film of vegetable oil.
- pan-fry the mixture in 2 tbsp amounts at a time, flattened
