Latkes (aka) potato pancakes

2 pounds of Russet potato

1 medium onion

2 eggs, lightly beaten

1 tsp salt

½ tsp ground pepper


  1. peel potatoes and put in cold water
  2. using a grater, grate the potato and onion into a bowl
  3. strain the mixture (see chef)
  4. pour off the water, keep the starch add to the grated contents
  5. add the eggs, salt and pepper
  6. heat a cast iron pan to 325 and coat with a film of vegetable oil.
  7. pan-fry the mixture in  2 tbsp amounts at a time, flattened
