In this unit, we will ‘travel’ the world through food. Of course, we can’t explore every part of the world in a 5 week unit, so we will concentrate on areas of the world that pride themselves on using fresh, local ingredients. In particular, cultures outlined by Michael Pollan in his most recent book: An Eater’s Manifesto.
Over the next couple of weeks we will:
1. examine some of the more basic politics surrounding food on a global level
2. determine which culinary traditions (aka cultural foods) actually benefit the planet
3. prepare, sample and sell several ethnic dishes by using local ingredients through our sales in the Pantry.
