Sauteed Cucumber with Chives

2 1/4 pounds large cucumber
a bunch of chives
4 tsp butter
1/4 cup heavy cream
1 Tbsp dijon mustard
1/3 C chopped Italian parsley
salt and freshly ground black pepper

1. peel the cucumber, cut in half lengthwise and scoop out seeds with a spoon. Cut into even strips
2. wash and cut chives into 1/2 inch lenghts
3. melt butter in a skillet, add the cucumber and raise the heat to high. Salt and toss the cucumber in the pan for 2 minutes (not a minute more)
4. add the cream and bring to a boil
5. remove from the heat, add the mustard, chives, parsley and season to taste

Can be also be served cold, but not icy cold.
