The Pantry is attached to the Food School classroom and acts as both our own pantry for preserved and prepared foods and as a store front where we sell our products everyday.

Usually found in the Pantry:
Preserves (jams, jellies, pickles, compotes, sauces, soups) fresh, student-made dairy products (yogurts, butter, cheese, frozen yogurts and ice creams) artisan breads (baguettes, French loaves, whole and spent grain, bagels) hand-made starches (pastas, gnocchi, perogies, crepes, lasagnas) vinegars, vinaigrettes.
In addition, we have developed several of our own Food School products:
Falcon Brew – an original blend of two Peruvian, Fair-Trade, Organic coffee beans – SOLD EVERY DAY
F&M Loaf- a 3 day artisan bread made with the spent grain from F&M brewery’s fired copper-kettle

Hello, Just read your article in today’s Kitchener paper and I think what you’re doing here is an amazing opportunity for these high school students. It’s wonderful to see that the Fergus/Elora area is venturing into this prior to some of the big city schools first. Reinforces what a great community we live in. My only suggestion is; I wanted to pick up some of the preserves mentioned in the article but found it very difficult to find an address as to where the “Pantry” is located on your website. You may want to highlight the Pantry and it’s location now that you’re getting more press, plus for people coming from out of town who may be looking you up.

What are you planning on doing with “The Pantry” once Bill 8 comes into affect? (The new healthy eating in schools mandate)
Most preserves require too much sugar and are not Bill 8 compliant..
Have you created any recipes that are bill 8 compliant?
I am currently changing all the bread recipes. I will send them to you by November. If possible, could you send me some preserve recipes that are Bill 8 compliant if you have started creating them yet? Please let me know!
